Finding out the hard way....
So I have been slacking on posting but I have a great excuse. This thing called life happened to me, gets me every time lol. So I'm finding out the hard way that big restaurant chains don't do veg so well. I did have a great veggie burger at Red Robin but that was about it. Anyway after my awful "veggie wrap" yesterday iv decided to stick with the salad part of the menu when eating out. How hard is it to mess up a salad? I'm sure that will come back to bite me tomorrow lol. Ultimately what iv come to find is that restaurants are drenching veg in crud which is supposed to make it taste good but they are ruining the health factor. I don't want lettuce that tastes like a deep fryer, that's not why I eat it lol. Anyone have any good restaurant suggestions? Id like to go somewhere that offers meat and veg options. Is there any hope? Lol. Happy eats!

Blase kind of day...
So its been a down kind of day. Running the boys around to VBS and entertaining them. I think I'm getting the meat headaches lol. I'm thinking its a much milder version of alcohol withdraw but with meat. Chicken nuggets were staring daggers into me today... eat meeeee. I said no, I'm so proud of myself. I told my friend Georgeann about my recent quest for veg to which she replied something like "oh that's great, hows it going so far.." And I replied "its been good, BUT I'M HUNGRY!" lol. Im thinking I need to make more things to go, I skip eating because I'm always rushing out the door. I will figure it out sooner or later.
I have to share my DC experience from Monday. We had a white chocolate frozen hot chocolate at Serendipity 3. Delish!

The Lassi Love Story
My cosmopolitan friend Nettie and I were coming back from a lecture by my hero Neil deGrasse Tyson and the amazing Mr. Richard Dawkins when we stopped for a bite to eat in College Park. We found this place called Krazi Kebob that has the most amazing food. They are a mix of Indian and Pakistani and awesome. I loveee their nann wraps. But back to my story... Nettie and I were hungry. We got our food and Nettie asked me if I had ever had Mango Lassi before. I'm an open minded individual who is willing to try anything once but I hate mangos so I wasn't too thrilled about the idea of a mango drink. I trust Nettie's judgement so I gave it a try and that is where the love story started. I have been craving it since first sip. Problem is, its a bit elusive. We don't have many places who sell it near my home. I got to thinking about how its made... coluldn't be that hard right? Well its not. I found this awesome recipe that im going to try asap. It will probably save me from having to drive 25min away to sooth my mango lassi cravings.

Lazy Weekend
Hey yall. Its been a lazy day for me and I intend on carrying that same theme into Sunday. I normally work 3 jobs during the school year and this summer I somehow have 4 jobs. Hooray for being productive lol. The reality of the matter is that the hubby and I are saving money for a baby. I heard they will suck you dry in more way than one, wanted to be prepared lol.
Anyway this will be a short post. I just wanted to brag about my Cut N Seal sandwich maker I got from Pampered Chef. I love those little crustables you can buy at the store and I was thinking it would be cheaper to just make them so I picked up the Cut n Seal at a friends Pampered Chef party. For me to just buy one thing was amazing considering I want the whole catalog. Anyway I got it home and decided to make some crustables and freeze them. I was thinking about what to do with the left over crust and croutons came to mind. I was searching for a quick recipe and this one came up. I'm a sucker for posts with pictures. What can I say I'm a visual kinesthetic learner. Looks yummy.
The Cut N Seal can be used for way more than just pb&j. It can be used for all sorts of things. My next adventure is going to be making some pumpkin bread pocket thing ( it will have an official name when I'm done baking it lol). I made ham n cheese hot pockets with the Cut N Seal a few weeks ago. I will post the recipe tomorrow when I dig it out.

Dia Dos
I loveeeee soup. I am a comfort food kind of gal. Warm mac n cheese, hot apple pie, peanut butter toast. Oh yeah peanut butter on toast has to be my favorite winter food besides soup. I was thinking about some cold gazpacho today while I was sweating my buns off running around with my two favorite kids today. So I went on another recipe hunt and found this Quick Gazpacho Recipe on a super cool site called Cooking for Engineers. I have been on this site for all of 10 min and am in love. So much cooking knowledge in one site! I'm drooling. Anyway what I found so cool about this recipe is that its done in the blender then plopped into a bowl and refrigerated. How easy is that! Engineers know how its done lol!
So back to my two favorite boys.... We ran around at Quiet Waters Park today and spent some much needed time by the water. We found out that the dog park there is now closed because of terrible erosion which makes me sad. I used to take my killer miniature daschund there to play. Yes shes a 7in tall killa, stone cold. So after our park outing we went to Chick Fil A where we dressed up like cows to get free food. America is great, isn't it!? They messed up my order but its free food so who cares. The Rizz has done fruit today so far.... a ton of it lol.
My husband sad the V word and now im craving it. Not V like True Blood V silly, V like Veggie Burgers! I'm on a quest to find a good veggie burger tonight for dinner. Hopefully ill find one local and wont have to drive to Timbuktu. Speaking of burgers... if your ever in Philly Jacks Firehouse has stellar food. I had the best black bean burger there a few years ago. Looks like its not on the menu anymore but the rest of the food looks great and veg friendly.

Day One
So today is day one of my pescatarian adventure. Iv been good today, no meat at all. So far chicken nuggets are the only sirens of the ice box but its all good. I will stay strong. So I decided to do this because it makes sense and not for any other reason. I love me some bacon and have no problem eating animals but the fact is I'm not getting any younger and neither is my ass. To put it bluntly my days of eating Babe have caught up to me and it shows. But there is hope, I have been a vegetarian and even a vegan before. You may be asking yourself, then why aren't you still vegetarian. what happened? The simple fact is that I hadn't found a way to make my diet easy. I was complicating it and eventually I cheated. Im a grab and go kind of person. I love to bake when I have time but thats once in a blue moon.
So my quest here is to find quick and easy vegetarian dishes to keep me on track. I want to make it for at least 4 months which is longer than iv done it before. Hopefully it will be a new lifestyle. My ass is going to thank me, im sure of it lol.
I would love it if people want to share recipies with me so feel free to post BUT mums the word if you try one of my recipes and think my cooking is horrible. I already get enough crap from working 3 jobs, I don't need to add anymore. So on to the first recipe....
I love PF Chang's Tofu Lettuce Wraps so I found this awesome recipe I am going to try for dinner tonight. Check it out... Tasty tofu lettuce wraps by Rahzh!
I had a left over experiment last week that turned out super good so I wanted to share that too. Im addicted to hummus and found hummus snack packs in the grocery store (it was a happy day fo sho). I was getting tired of plain old hummus on bread so I decided to kick it up a notch. Try this out and let me know what you think. Im calling it the Hummus Cheese Spectacular (lol i never claimed to be a real cook, just keep that in mind)....
Slice up french bread and place it on a baking stone or cookie sheet
Spread roasted red pepper hummus over the slices of bread
Place goat cheese crumbles onto the hummus
Sprinkle shredded parmesan cheese on top
Broil on high for 7min
Let them cool for 2ish min
